This sake is an enigma. Brewed using the old yamahai method with Association. No. 7 yeast (discovered at Miyasaka Brewing in 1946), one might expect a rich punchy sake but no, something quite refined emerges from the glass, full of mineral notes and crispness, reminiscent of Pinot Grigio. High acidity helps to balance out the complex taste and leaves a refreshing clean finish. Recently the brew has been further upgraded by only using the finest middle part of the pressing (aka ‘Nakadori’) for even greater elegance.

The Brewery
Miyasaka
Set up in 1662 in the town of Suwa in Nagano Prefecture, the Miyasaka brewery are the craftsmen behind the famous Masumi sake brand. Throughout its history, Miyasaka has been a favourite brewery of many famous figures such as Matsudaira Tadateru, the sixth son of the first Tokugawa Shogun.
