The range is produced by Asahi Shuzo (not to be confused with the beer!) in the beautiful Yamaguchi prefecture, on the Soutwest coast of Japan. The numbers used in the signature range - Dassai 45, Dassai 39 & Dassai 23 - refer to the high polishing ratio of the rice used, which leads to a deliciously clean, fruity and aromatic style. These sake are recognised for pairing well with a range of foods and dishes.
